Zucchini Quiche


What to make for that potluck, baby shower, or in my case....mom's get together!? 
Yep, I've got you covered!
I adapted this recipe from the 1980 Bake-Off-winning recipe from Pillsbury.
This recipe is kid friendly, easy to make, and even freezes well.

The Ingredients:
1 Tbsp Butter (and olive oil as needed)
4 cups thinly sliced zucchini
1/2 cup chopped onions
2 Tbsp dried parsley flakes (and whatever other herbs you may have on hand: basil, oregano, etc.)
1/2 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
2 eggs, well beaten
2 cups Muenster or Mozzerella cheese
1 can Pillsbury refrigerated crescent dinner rolls

Directions:
  1. Heat oven to 375F. Heat skillet, and melt butter over med-high heat.
  2. add zucchini and onions, cook 6-8 minutes, until tender; add more olive oil if necessary.                Stir in parsley/herbs, salt, pepper, and garlic powder.
  3. In large bowl, mix eggs an cheese. Then add cooked vegetable mixture, stir gently to mix.
  4. Separate dough into 8 triangles. Place in ungreased 10-inch glass pie plate/baking dish. Press over bottom and up sides to form crust. Firmly press perforations to form seal.
  5. Pour egg mixture evenly into crust-lined pie plate.
  6. Bake 18-20 minutes or until knife inserted in center comes out clean. I cover the edges of the crust with foil the last 10 minutes of baking so that my crust does not come out burnt (that's the best part!)


The Ingredients

Sauteing onions & zucchini together

Stirring together egg & cheese mixture

Rolling out the crest & pressing the perforations together

Adding vegetable mixture to cheese mixture

Pouring in the good stuff!

Don't forget this step to keep your crust golden while the rest of the
 quiche continue to bake

Yep, you will be the talk of the town when you bring this to your next gathering ;)

Endive Fig Appetizer





Got this little inspiration from a quick stop at Whole Foods. They were giving out samples of this appetizer and I immediately fell in love with the light, sweet & crunchy taste. Super easy too!

The base is endive leaves
then goat cheese (I bought honey goat cheese)
fig paste
sliced/slivered almonds

viola!
done!
that's it!!
enjoy!





I really wish I took a picture of the fig paste I bought at Whole Foods (bc of course they were not handing out free samples for nothing, they were promoting too!). It was in a small brick-like package in the cheese aisle. I liked the fact that I just sliced it and put it on the cheese, less of a mess than trying to spread jam. Next time I am there I will need to search for it and take a pic! But in case you cannot find that particular one, you can use fig jam, apricot jam, etc. Whatever your little heart desires.

ran out of endive leaves, so used thin crackers, improvisation at its best.

I usually start with a taco seasoned sour cream, salsa, guacamole, refried beans, lettuce, tomatoes & lots of cheeeeeese.

Swiss Fondue

Had the desire to try out my fondue pot again, because the first time I used it with chocolate it was disastrous.
Bought some Emmental cheese, and was ready to look for a recipe! I have recently discovered a new food website: FOOD 52 and am really liking it. I got this Swiss Fondue recipe from it. The most important thing about making a cheese fondue: do not let the ingredients BOIL and STIR, STIR, STIR! Make sure all the ingredients are measured and ready to go before you turn on any heat!

FIESTA de SALSA



I had the privileged to go to a friend's house for a SALSA PARTY
Each one of us brought an ingredient, and spent our afternoon chatting & chopping. Then we layered our ingredients to our liking and preference. The result: fresh goodness!! And lots of salsa.
We made Pico de Gallo and a Corn Salsa

 

For the Corn Salsa we layered
*canned corn
*tomatoes
*red onion
*garlic
*jalepeno pepper (for heat)
*red & orange bell pepper
*cilantro
*lime juice
*sprinkle of sea salt

there is no "right" amount of the ingredients, it's what you like and how much of it you want!
