Coming together and making crêpes is a great way to spend time with friends, catch up and enjoy some really delicious food in a fun way!!
What a group of friends and I did:
The hostess prepares the batter for the 'savory' crêpes and already has the 'sweet' crêpe layers done.
Guests are asked to bring different fillings for both (best if you email each other which one is bringing what so that you have a nice variety).
SAVORY...........................................................................................................
Batter Ingredients:
1 cup flour
1/2 cup milk
4 eggs
1/2 water
1/2 tsp salt
2 tbsp melted butter
Blend all ingredients together to get a runny, soupy consistency. If necessary add more milk.
(we doubled the recipe for 7 girls and a few extras)

our lovely array of salads |
Once guests arrive, heat up the skillets! One to make the savory crêpes fresh, and another one warm and ready to go so that when you add the fillings, it can heat up your ingredients and melt the cheeeeeese.

SWEET...........................................................................................................
Batter Ingredients:
2 cups flour
2 cups milk
4 eggs
1/2 tbsp sugar
1/4 tbsp salt
2 tbsp of oil
Blend all ingredients together to get a runny, soupy consistency. If necessary add more milk.

For the sweet crêpes we had a cream cheese filling, that goes great with berries. And good ol' Nutella which pairs perfectly with bananas. Of course you can mix and match it anyway you want ;)
Cream Cheese filling:
250g (1c.) cream cheese
500g (2c.)low-fat cottage cheese
4 tablespoons sugar (or to taste)
beat ingredients in mixer until uniform.
note: we used Canadian brand 'Nordica' cottage cheese which has a thicker consistency than most U.S. brands. Be careful your filling is not too runny, strain the cheese a little if necessary.
